I get a lot of women who reach out to me asking me if it’s possible to have a vegan or vegetarian lifestyle, all while being able to successfully compete. There’s a LOT of misinformation out there regarding competing, and finding balance with a vegan/vegetarian lifestyle.

I think it’s super important to have this discussion. And further to present real world proof of what’s truly possible.

Meet Nicholee – A Vegan Master’s Figure Competitor and True Inspiration

Nicholee came to me after needing to switch from another coach with only about 5 weeks out from her upcoming show. These are always not the ideal kind of situation that I like to begin a prep with. HOWEVER, I saw the potential she had to do great out there and agreed to take her to the finish line.

What happened next was the forging of an amazing mentor/client relationship. And even further, a journey that has proven that having a balanced and sane vegan lifestyle does indeed go hand in hand with competing.

Nicholee’s Salted Caramel Chocolate Seitan Recipe

2 tbsp cocoa powder

40 gr Prana On Salted Caramel Protein Powder

60 gr vital wheat gluten

1 tsp vanilla extract

1/2 cup water

Mix dry ingredients together well in a mixing bowl. Add water & vanilla & stir to combine. The dough should should be moist, but not too wet or sticky. Add small amounts of water to achieve the right consistency. Knead for about 1 minute, longer if you prefer a chewier texture.  Divide into 4 portions & shape into patties. Let sit for about 10 minutes. Heat Foreman grill to 375. Once hot, lightly spritz with cooking spray and place patties on the grill. Grill for 8 – 10 minutes.
